chocolate covered peanut butter paddies


I absolutely adore pinterest. I could spend hours looking at all the mouth-watering recipes posted each day. Last week when I had some time, I made these sweet treats for Doug and Smirti. Recipe courtesy Two Tiny Kitchens:

1 cup creamy peanut butter
2 tbsp softened butter
1/2 cup powdered sugar (you may have to add more)
3/4 cup brown sugar
pretzels
1 bag semi-sweet (or milk) chocolate chips

Combine peanut butter and melted butter in a large bowl with a fork. Add the sugars and mix all together to combine. Once the mixture is not too sticky, roll the peanut butter mix into balls (if it's still sticking to your hands, add more of each sugar). Roll into tiny balls and sandwich in between two pretzels. Once you have made enough pretzel sandwiches, stick in the freezer for about 30 minutes.


After a half an hour of chilling, it's time to melt the chocolate. Pour the chips into a microwave safe bowla nd heat at 30-second intervals, stirring until melted. Take the pretzel sandwiches from the freezer and dip each one half-way into the chocolate. Return to the tray once dipped, and when all are finished place the tray back into the freezer. Store the peanut butter paddies in the refrigerator and serve! They are addicting.
