100 Calorie Cupcakes...

100 Calorie Cupcake Recipe (courtesy of Biggest Loser)

Ingredients:
5 organic egg whites
Pinch of salt
3 tbsp. honey
2 tsp. vanilla extract
1/4 cup greek yogurt
1/2 cup whole wheat flour
1 tsp. baking powder

For frosting:
1 cup nonfat cream cheese
1/2 ripe banana
splenda


Preheat oven to 325 degrees F. Place egg whites in large bowl and using a handheld mixer whip the whites until they hold their shape. Add salt, honey, and vanilla extract and whip until soft peak. Fold in yogurt. 

In a separate mixing bowl, combine flour and baking powder. Sift the dry ingredients into the egg whites a little at a time. Gently fold with rubber spatula.



Once fully mixed, scoop batter into cupcake papers. Bake for 15-20 minutes (until golden). Remove and cool at room temp.




Mix the cream cheese and banana in a medium mixing bowl, leaving small chunks of banana throughout the frosting.


Once cool, spread a little banana frosting over the cupcakes and serve!

**Side note: These were a little too healthy for my liking. I was imagining they'd taste just like a good vanilla cupcake, without the fat. I was wrong. However, give em a try if you are watching your waistline!
