Low Fat Irish Soda Bread

In the spirit of St. Patrick's Day, I decided to bake irish soda bread. I found this great low-fat recipe off of Gina's Skinny Recipes. It's easy to make, and it doesn't require many ingredients. I've loved having it for breakfast each morning.

  • 1 1/2 cups all purpose flour
  • 1 1/2 cups whole wheat flour
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 4 tbsp sugar
  • 1 1/2 cups no-fat buttermilk
  • 3 oz. (2/3 cup) raisins
1. Preheat oven to 375

2. Mix all dry ingredients in a large bowl.



3. Slowly add buttermilk stirring with a spoon until a soft doug is formed.




4. Add raisins, knead the dough lightly on a floured surface for about 1 minute. Form into a round, slightly flattened shape.



5. Place on a cookie sheet. Using a sharp knife, make an X at the top about 1/2 inch deep. Bake about 40 minutes, until golden. Let cool on bakers rack for about 5-10 minutes before serving.



6. Voila! Irish soda bread!
